Earlier this year we launched our new masterclasses at The Cotswold Chef Food Centre, and they have been a huge success. We offered several different masterclasses since the Spring, including one focusing upon wedding cupcake towers.
As a bride-to-be, myself, I’m looking forward to putting my own stamp on aspects of my day, and I have lots of conversations with brides who would like to create their own wedding cupcakes and cakes. Following a poll on our Facebook page and in the shop, our fans and customers, asked for us to run a masterclass f
ocusing on more traditional tiered cakes, that will teach transferable skills for either wedding, birthday, celebration or just because… cakes.

Following the successful of our Wedding Cupcake Tower masterclass, our new Elegant Two Tier Cake Masterclass is perfect for those who would like to be more ‘hands on’ with their own wedding, or for those who wish to take their hobby to new heights!
The masterclass is suitable for beginners and those with experience of decorating cakes. The masterclass is a ‘hands-on’ class and you will be creating everything, yourself.
The masterclass will be split into four parts, each focusing on different aspects of cake preparation and decoration.
- How to use florist paste to create wired, large roses
- How to make sugar blossom accents
- How to use lustre powders and sprays
Preparing the Cakes
- How to level a freshly-baked cake, for a flat and even surface
- How to split, cut and fill the cake
- How to make the perfect buttercream (demonstration)
- How to crumb coat the cake for the perfect base for icing
- How to prepare a ‘dummy’ tier
Icing the Cakes
- How to prepare and colour sugar paste for the cake
- How to ice a cake board for a professional finish
- How to confidentially work and manipulate sugar paste
- How to ice both the cake and the ‘dummy’ cake
Finishing the Cake
- How to use cake dowels for stacking cakes
- How to stack cakes so they are secure and straight
- How to arrange your handmade roses and decorations
- How to ribbon trim your cake to complete your design
In preparation for creating the roses and icing the cakes, we will work with food colours to create a balanced colour palette of your choice.
As we have a lot to cover during the masterclass, this is an extended day class and costs £150 per person. The masterclass will start promptly at 10.00am and running to approximately 5.00pm.
All ingredients, sugarcraft tools, recipe sheets and materials for the day are provided. You do not need to bring anything with you. Refreshments and lunch are provided.
You will go home with a boxed two tier cake to take home, and masterclass notes on the techniques learnt during the day. We also have an active Facebook Discussion page, where you can also ask any questions and get hints and tips.
The masterclasses often sell out quickly, and we do advise that if you are looking to join us, it is best to book sooner rather than later. The masterclass will be kept to a maximum of 8 students. We like to keep our masterclasses small, so that everyone has ample opportunity to ask questions and get as much help as needed.

We are able to assist with travel arrangements, and can advise on trains and public transport. The College is a 10 minute taxi journey from Kemble Railway Station and it is possible to arrange collection. There is also plenty of free parking at the Royal Agricultural College if you are driving. We can also advise on accommodation, if required.
Please double check the date that you wish to make the booking for as all courses are non-refundable, and no refunds will be made for cancellations. In the unlikely event that we have to cancel a class, a full refund will be offered. Please note that places on courses are not held, until actual payment is received.
